View Full Version : What to do with Mung Beans?

Hi All,
I grow several sprouts, and mung bean REALLY sprouted and I now have LOTs of it. Have to use it up before it goes bad, so what can I do with them. I know they are used as a topping on Asian soups, but is there anything else you can think of that I could use them for?

Love making the sprouts, so if you have recipes or ideas, let me know.

Egg Foo Yong or scrambled egg with sprouts, green onions, maybe finely minced celery and/or water chestnuts. Add soy sauce or make a soy/cornstarch gravy.

I like to make a faux fried rice with finely chopped (sawdust consistency) cauliflower, and I put similar ingredients in it (including bean sprouts). With scrambled egg bits, sesame oil, and BBQ pork. So fried rice is another option.

Do you have any ideas for a more vegetarian sort of meal? We don't usually have beef or pork around. Although we do have eggs.

And what is faux fried rice? Is it not fried?

Scrambled eggs with sprouts sounds pretty good, too.
