I just can't keep up with our cherry red rhubarb, and I need to do something to preserve some of its deliciousness for fall & winter.

Is it okay to freeze rhubarb? Does it thaw out okay? I had the thought of putting together little frozen kits with rhubarb and strawberries for quick cobblers in the winter. Would that even work?

That's pretty much all I do with rhubarb. Just chop first, freeze, then I let thaw out for a bit before baking. I usually mix it with apples or strawberries for the fruit part.

A lot of recipes call for 4 cups so freeze it in 4c serving sizes. You might want to lay it out on a pan in a single layer first and freeze that before dumping it in a bag (otherwise you'll have a rhubarbsicle) but it's just fine if you don't.

We also stew it up gently and freeze with some sugar. Later, we add it to some strawberries and stir in strawberry jello for a refreshing winter dessert.
