Perfect for a summer lunch or dinner.

Fruited Chicken Salad

4 cups diced cooked chicken breasts ( about 6 breasts)
1 15 oz can pineapple chunks, drained
1 cup chopped celery
1 11 oz can mandarin orange section, drained
1 cup seedless grapes, halved
½ cup sliced, pitted ripe olives
½ cup chopped bell pepper (green)
2 Tablespoons sliced green onions
1 cup mayonaisse
1 Tablespoon prepared mustard
1 5 oz. Can chow mein noodles

In a large bowl combine first 8 ingredients. Blend Mayo and mustard. Toss gently with chicken mixture. Cover and chill several hours. Just before serving, mix in chow mein noodles. Serve on lettuce leaves on chilled salad plate.

So funny! I just had this at my DH's grandma's house, minus a few ingredients. I hate fruit in savory foods and celery in any form, yet I ate it up. Must be my love of mayo trumping all. It was delicious - magic salad.

My Momused to make a version, leaving out the mandarin oranges (just grapes for the fruit) and adding slivered almonds. Oh, but no chow mein noodles, that I would not do.

Olives, green onions and fruit together? Sounds very interesting.
