Thirst drove me down to the water where I drank the moon's reflection. -Rumi

I don't know what this means, I only have an interpretation:

While thirsty (which is beyond hunger) and in the dark (suffering), he was so sure that it was the water he needed only to find himself drinking in the moon's reflection: he sought the water (the material), only to receive or be captured by the enLIGHTenment (the spiritual). The longing was so intense that it "drove" him "down" to the lowest point, where water always goes (a Taoist theme), into a humility and simplicity where the ego can't survive.

If one views it as though he drank the water too, it would be a kind of acting out of the receptivity associated with the yin which is symbolized by the dark and the moon as the dot or "eye" of the yin fish. I know Rumi was Sufi but universal themes like yin/yang would not go unnoticed by a genius like him. This is so resonant I can imagine many more layers of meaning.
