			<content:encoded><![CDATA[<div>One of my few simple living talents is eating well on the least amount of money. And tonight I'm telling myself &quot;honey, maybe you're carrying this a little too far.&quot; Maybe leftover management is best left to professionals.<br />
<br />
Friday's menu was char-siu (Japanese pork roast) with rice and a saute'd zucchini/onion thing ('cause the zucchini was getting old and needed used). Fine. But there was a bunch of rice left over, and a dish of the zucchini. There was pork left over too, but I guided DH and his Friday night buddy toward midnight little pork-roast sandwiches - it worked and got rid of the last of the pork.<br />
<br />
So Saturday morning I know we're having a classic brunch of sausage and rice and eggs. Will use up the leftover rice. Fine. But then I decide I can and should add some nutrition by making Mexican rice and did, sautéing onions and peppers to make the rice and threw the leftover zucchini in it. DH couldn't stop (1) eating it; and (2) talking about it. My improvised Mexican rice was a hit. But now I have a cup or two of leftover Mexican rice. Leftovers of leftovers.<br />
<br />
Saturday night was a snackie-type thing - I was craving ham-n-pickle rollups, and had a block of cream cheese getting old. So made us ham-n-pickle rollups, and ham-n-asparagus rollups. Fine. Perfect for a Saturday night. Only didn't use all the cream cheese/green onion mixture. More leftovers.<br />
<br />
So this evening wanting to make an asparagus tart ('nother thread), but I realize I need to do something with the leftovers in the fridge. So I decide to mix up the leftover Mexican rice with the leftover cream cheese/green onion mixture, adding a can of chicken, a dollop of sour cream, sprinkle of taco seasoning and some cheese, and wrap it all up in tortillas and fry for chicken chimichangas. They turned out pretty wondermous. Fine.<br />
<br />
But I had too much stuff. (Who knew 1 can of chicken and 1 1/2 c. of rice could grow to so much filling?!) So I ended up making 15 chimichangas. So I had to freeze half of them.<br />
<br />
Which I believe, if I'm counting correctly, makes leftovers of leftovers of leftovers of leftovers. <br />
<br />
Your Sunday evening humor, if you like. I think maybe I'm ridiculous.</div>

Mix together 5 tbsp of honey, 1 tsp of lemon juice and 3/4 tsp of poppy seeds.  Pour over the fruit and toss gently.     It was so  good.  My DH just loved it.</div>

			<content:encoded><![CDATA[<div>We have 2 small asparagus beds and haven't taken very good care of them, as far as weeding.  DH went out a couple weeks ago and finally weeded them.  Then.......they really started popping up.<br />
Plus, we have found 2 &quot;wild&quot; beds this past week.  One is already making fern tops, but the other one just needed some TLC and is putting asparagus out too.  So we have ALOT of asparagus.<br />
Here is a pic of an Asparagus tart that I've made in the past, and think I'll make it again soon with all this asparagus.   Its was DELISH......if anyone wants the recipe.<br />

			<content:encoded><![CDATA[<div>I don't know if this should go in this forum, Community, or the Open Forum but here is where I settled.  I have heard the term &quot;funeral food&quot; although not in actual conversation, but today the term has been ringing in my head. We had a death in the family late last night, my DH's older sister.  She is about 16 years older than my husband, and had been in bad health for a number of years so this death was not totally unexpected.  Still, there are things that have to be attended to at a time like this.  So today after 2 trips to the funeral home, one to a florist, one to a clothing store, and many phone calls, just having some food that I didn't have to prepare or go out and get would have been nice.  Granted I am from a more Southerly state where this was &quot;the way things were done&quot; a few years back, but apparently not any longer.  When I was a child/teenager/young adult and there would be a death in the family, neighbors would begin bringing food to our house.  Lots of food.  It was there for anyone who happened to be there and wanted to eat; the work was already done.  I am guessing this is a thing of the past.  I am also guilty; I don't bring food to anyone's home following a death myself.  10 years ago when my mother passed, the office where I worked sent some sort of &quot;tray&quot; to my house (cold cuts?  fruit?  I don't really remember), and one sweet elderly little lady came with a homemade pie.  That was the extent of it.  A lost art of kindness - and as I said, I too stand guilty.  Maybe it was because that was a time when a lot of mom's didn't work outside the home and therefore were able to made food to take to others.  But, I remember my stepfather's aunt who was teacher, always kept a homemade cake or something in the freezer so she would have a dish to take in case of a death in her community.  Does anyone else remember this practice?  Is there anyone who can say it still goes on in their community?</div>

Oh my!<br />

So sweet!  So tender!  I can feel the vitamin C coursing through my body.<br />
<br />
My technique for cooking is to whack them, unpeeled, into chunks with my cleaver and steam them (after scooping out the pulp and seeds.)<br />
<br />
The peel almost falls off by itself this way after steaming.  The cleaver whacking works out any aggressions wonderfully.<br />
<br />
Mashed with a bit of sweet butter and a shake of cinnamon and I'm in veggie heaven. <br />
<br />
Tomorrow night I'm going t a pot luck and I'm going to try something new-- squash, black bean and pepper jack cheese enchiladas--with a lime-honey sauce--and some salsa verde for dipping.<br />
<br />
Might be good- might be weird, we shall see.<br />
<br />
Any other squash lovers out there in cyberland??</div>

But in a blaze of positive energy I made a pot.  And ate a bowl. It was ok.  It was.  Lentils are just not my thing. I'm not looking forward to eating anymore and it's still a half a crockpot. Sitting in the fridge.  Any ideas for eating it?  I know I should just eat it.  It shouldn't be a choice, should it?</div>

It's good fresh, cooked, or pickled.<br />
It may be of Eastern European origin.<br />
The plants are very productive.</div>

Yesterday I was shopping at Marsh, and checked them again, and this time they are from China!!     Can't our warmer states grow our own snow peas???   If this rain ever stops, I'll plant my own.  Actually, I planted some 2 weeks ago, but nothing came up.    I'm going to call/write Marsh..............not that it will make any difference, but I'll feel better about it.</div>
