    A layered bean dip, using mashed beans of any variety (I mix with taco seasoning) and topped with whatever: shredded cheeses, peppers, onions, lettuces, olives, sour cream, avocado/guacamole, etc.....And using whatever you feel good about as a vehicle to dip into it.

    My standby beans are pintos. Ranchero, refried, or campaneros style beans. But, this week I made a pot of lentil, vegetable soup to take this week for lunches at work.

    There is a great cookbook called "Bean Banquets" that has many ethnic bean recipes...a great book for bean lovers.....

    Once I took a bean cooking class, it was one night and we made a variety of bean dishes.
