I always used a bread pan, and I usually used lean ground beef so it wasn't all that drippy. I mixed the raw meat with oatmeal and a good dollop of barbecue sauce and a raw egg, squished it all together and put it in a pan. I usually glazed the top either with barbecue sauce, hoisin sauce, or a Thai sweet chili sauce I get at Costco. Never thought of putting anything dairy in. (Past tense since I now make the tofu/lentil loaf called Lynn's Loaf, from the Engine Two cookbook that someone here told me about instead.)
