Pizza or flatbreads made on the grill with a salad alongside. Gazpacho soup and bakery crusty bread. Kabobs with chunks of fish or meat with veggies (grilled of course to not heat up your kitchen).
Grilled corn, variety of fresh salads and shrimp with seafood dip. My family that likes shrimp (one does not) think this is the perfect summer meal. Ice-cream and berries/fruit salad for dessert. I find that using the genuine ingredients seems to be the key feature. I only say this as so many substitutes are being used nowadays.

boneless grilled tenderloin, salad from fresh corn and beans, melon or fresh strawberries.
Cold, poached salmon with home made mayonnaise, Jersey Royal potatoes and runner beans (exactly what we're having this evening). I made a summer pudding this morning which I'll serve with Rodda's Cornish clotted cream, given to me by the friends who are Visiing from Cornwall.

Last night we had a neighbor over for dinner. For Minnesota, the temperature and humidity have been oppressive. And I just wasn't up for a lot of time in front of the stove. I served large-ish shrimp stir-fried in a little olive oil, a little butter, a squirt of sriracha sauce, and thinly-sliced garlic. It took more time to heat the pan than use it. I served this on a bed of mixed greens (from a bag) with some heat-and-serve naan. It wouldn't take but more time (and maybe marinating) to substitute chicken chunks for the shrimp for those who do not/cannot eat shrimp. It went over very well, with just enough to send home with our neighbor.

A flavorful roasted chicken that you could roast in the morning and then serve chilled.
Cobb salad
BBQ pork sandwiches, vinegar based cabbage slaws, mixed chilled fruit
