    Extra Turkey

    So we came out of Thanksgiving with an extra turkey, and after turkey two nights in a row, I am less tolerant to eating additional turkey than I would have expected (although it has never been one of my favorite things). Freezing it seems like the easiest solution, but we have a pretty small freezer, and even if we can fit it in there, it would take up way too much room. I was thinking maybe a break from turkey today, and then tomorrow, turning it into a big turkey stew, some of which we could freeze in small containers. Any other good ideas?

    I would use it in any way you might use chicken.

    Soup is the first thing that comes to mind. Turkey noodle soup? Stir fries?

    Went to a community soup luncheon that was a fundraiser for the local food banks. One of many soups available was called Christmas soup - make delicious turkey soup with lots of veggies; place spoonful of stuffing in the soup bowl and fill with soup. It was a very popular table

    Any spicy dish you'd use chicken for would be easy to sub in the turkey - and it wouldn't be obvious. I was thinking tacos, enchiladas, etc like others have said.

    Is this a second cooked whole turkey? If so, I'd portion up meal size servings and keep / freeze the carcass as well for broth. Then freeze. I wouldn't freeze the whole thing - too much of a hassle to utilize in the future.

    I think it would be nice in Alfredo sauce over fettuccine. Maybe a veggie mixed pasta dish with simple olive oil and garlic?

    I have a friend who said they took some wonton wrappers, and used turkey/stuffing/cranberry sauce/whatever for filling and fried them. Nothing healthy, but she said they tasted awesome.

    My Mom used to make creamed turkey and you put it over toast.
