    So one thing that got me thinking about starting this thread is a coworker of mine.

    We call him PBM. He is 37, a dedicated bachelor, and unaffiliated simple living guy. Not a minimalist though, as he loves video game systems and has a collection of 100+ bobble heads, for a examples.

    But he has been eating the same meals for at least a decade now. Daily.

    Breakfast: Ice tea (every M-F at work).

    Lunch: Either a green apple or a handful of peanuts or a granola bar. Once a week he gets a Bruegger's bagel for lunch with a couple coworkers when he is in a "Brueg Mood."

    Dinner: Can of lentil soup or clam chowder and a spinach salad (just spinach) and some Italian dressing or a bowl of cereal and a few scrambled eggs. Once a week he orders Chinese food.

    His diet is supplemented with some beer and some vitamins. haha

    That, right there, is my idea of hell, along with getting stuck in a nursing home with an extroverted roommate.

    Soups, particularly my favorites to make: lentil, mushroom bourguignon (not really a soup, but I tend to make it soupy), and chioppino with lots of different fish.

    Very high mileage! Great nutrition, and leftovers are even better second time around.

    Lentils are so much easier to cook than other legumes and can be spiced lots of ways.
    I never get tired of peanut butter.
    The humble potato. I like them baked with a big spoonful of nonfat yogurt, mashed with carrots/turnips/whatever, throw them in soup, use leftover baked potatoes for salads or in home fries.
