    I love lentils because you can do anything. I used to cook them and put them in spaghetti sauce, and my favorite is soup however with crunchy french bread. My recipe does not have tomatoes but does have cumin and a touch of cayenne, carrots and celery too. I have seen ones with kale that look good. But soup is flexible, play around and if I have time I will post my recipe

    Here is another wonderful soup. I got the recipe here -

    Lentil Barley Soup - Pressure Cook

    1 cup rinsed lentils
    ½ cup barley
    6 cups water or stock
    1 onion chopped
    2 cloves garlic chopped
    2 carrots sliced
    2 celery sliced
    ½ tsp each of oregano, cumin, salt
    ¼ tsp each of black pepper, red pepper flakes

    Add all to pressure cooker and cook 7 minutes at high pressure. Serve with bread.

    Recipe from Big Dan circa 2008

    happystuff, I am sure you don't need a pressure cooker to make these soups. However, I don't know how to convert the recipe for you. I hope you enjoy them. I may have another, I will keep looking for you.

    Thanks again, thinkgreen. I love soup! Actually going to make a chickpea soup today since the weather has cooled down quite a bit. Glad you like the pancake recipe!

    Here is the other soup.

    Hearty Lentil Soup
    1 Tbsp olive oil
    1 onion diced
    2 cloves garlic chopped
    1 each of carrot and celery chopped
    saute above until softened
    then add the below and cook 2 minutes
    1 red pepper chopped
    2 Tbsp lemon juice
    1 tsp cumin
    1/4 tsp each cayenne and thyme
    after the 2 minutes add the following and simmer 1 hour until tender
    3 cup diced tomatoes
    4 cup stock
    1 cup red lentils rinsed
    1 potato diced

    Found a fabulous recipe for Mushroom Burgers. Made them and then decided to give the same recipe a try but using soy beans instead of the mushrooms. It worked! Other family members want more spices added next time, but I now have a use for the soy beans that the family approves of!
