What are the top ten spices you get the most mileage out of? Salt does not count, though let's say pepper does count in the ten.

No particular order:
Ground black pepper
Garlic (granulated or powder)
Chili powder (if only because one tends to use so much at one time and there's no convenient substitute)
Red pepper flakes
Cumin (good for Asian and Central/South American dishes)
Celery seed (adds a bit of bite to what you add it to)
Paprika
Basil
Oregano
Seasoned salt (good alternative to S&P on eggs, veggies, etc.)
Success is to be measured not so much by the position that one has reached in life as by the obstacles which he has overcome. - Booker T. Washington
I Don’t cook much without garlic and onion, but those are not spices. I do not ever use granulated garlic. Just recently I was forced to buy peeled garlic in a jar to keep in Hermann, And it seemed to me that this garlic in a jar was very hard, it didnt cook down and soften.
I dont use a lot of dried spices—you do mean dried, right? Anyway—spices—
black pepper
Oregano
Parsely
Tarragon
corriander
cumin
I dont use dried basil, use it fresh. I dont use small red hot peppers because I have a lovely Sambal Oelek at the ready.
The only dried spices I do like alone is tarragon I think it has a lovely fragrance and taste. That pepper/oregano/parsley and probably something else I use for Italian dishes. Coriander/Kuhman our used an Indian dishes and one of them is Mexican can’t remember which one.
One thing I’ve been using a lot of lately is concentrated chicken stock in a jar. I use that for a lot of thngs I cook, just a little bit.
edited to add’ I occasionally use fennel, when
I remember. The only pizza we go out for is a heavily fenneled pie.

My husband really likes two spice mixes from Penzeys: Pasta Sprinkle and Sandwich Sprinkle. He gets a lot of use from them and probably doesn't use much solo oregano anymore as a result.

Black Pepper
Smoked paprika
Granulated garlic
Herbs:
Parsley: curly and flat
Basil
Thyme
Rosemary
