Costco is great for stuff you can grab right out of the fridge. I love those little smoked salmon squares you can put on crackers. To Steve's point about spontaneity if you don't mind a little pre-planning, soups in a crock pot are definitely grab and go after they've simmered a while--soup is my go-to quick meal.
Rotisserie chicken is a great idea.
I LOVE samosas and egg rolls and Scottish meat pies you can take out of the freezer and heat up.

The already prepared brown rice with some canned tuna really was a dinner one weekday this week, so weekdays ...Thinking of this in connection with the Salad Spinner thread, Rosa's words of wisdom, "If you never turn on the stove, you will never melt your salad spinner on the stove."
I was recently asked if I had an extra salad spinner to "lend" (ie give away), well why as a matter of fact ... when you melt them as fast as I do, yes there is an extra one I found at the thrift in a shelf in the closet.

The grazing aspect is what I like to do for the lunch meal most of the time. What I like is usually a small plate with a sliced banana, some yogurt, whole almonds and a few pieces of dried fruit like dates. This is a good combination for me usually, and seems fairly healthy.

I've often read of people melting parts of their Instant Pots. Not likely to happen here.
