I have an iPhone 8 plus. I take tons of pictures with it. But lately, when I turn on the camera, and use it for "photo", the image flashes blurry/then clear, blurry/then clear, constantly, and it won't take a picture. Any ideas?

It sounds like it is trying to autofocus, and failing.
So:
1 - clean lens, perhaps there is a gooey fingerprint on it confusing it
2 - sometimes a gentle tap on the top edge of the phone near the camera will unwedge it if it has gotten hung up
3 - some cases can interfere, or have grime accumulate enough to interfere
4 - hard reboot the iphone
I think also Googling "my iphone camera won't autofocus" will get you more in-depth recommendations.
Also, you can force the focus, usually, by tapping on the screen at the focal point you want.
