This morning I went to a birthday brunch which was fun, interesting with wonderful dishes. Most were the usual but delicious selection of slow cooker or baked along with deviled eggs, and salads of veggies and fruit with a birthday cake that was amazing with a layer of custard.
The highlight for me was a salad made of thinly sliced cukes, thin sweet onion rings, slivers of fresh peppers and chunks of watermelon lavishly sprinkled with feta cheese and drizzled with raspberry vinaigrette with a light dusting of Greek spice. It was so good!!!
The lady who made it said she had to modify her usual recipe since her grandchildren didn't like tomatoes and she didn't want any lettuce that might wilt. The raspberry vinaigrette was light and she said it keeps for about 5 days in the fridge. This will become my potluck dish when watermelons are available.
