New recipes that we have found wonderful

This morning I went to a birthday brunch which was fun, interesting with wonderful dishes. Most were the usual but delicious selection of slow cooker or baked along with deviled eggs, and salads of veggies and fruit with a birthday cake that was amazing with a layer of custard.

The highlight for me was a salad made of thinly sliced cukes, thin sweet onion rings, slivers of fresh peppers and chunks of watermelon lavishly sprinkled with feta cheese and drizzled with raspberry vinaigrette with a light dusting of Greek spice. It was so good!!!

The lady who made it said she had to modify her usual recipe since her grandchildren didn't like tomatoes and she didn't want any lettuce that might wilt. The raspberry vinaigrette was light and she said it keeps for about 5 days in the fridge. This will become my potluck dish when watermelons are available.
As Cicero said, “Gratitude is not only the greatest of virtues, but the parent of all the others.”

I recently made a salad with arugula, goat cheese, black olives, red bell peppers, pearled couscous and some other stuff for a neighborhood potluck. Not one person knew what the couscous were - "Tasty but what are these little balls?"

Just last night I made a salad of cucumber, Feta cheese, onions, and vinegrete dressing but no watermelon. The watermelon elevates it to something special.

My latest new food thing is this: adding dill pickles to pulled pork sandwich. Takes it all a step up.

And that reminds me, I have made dill and potato soup twice recently. Cook potatoes in a chicken broth, blend with dill pickles to taste. I love it! DH wont eat it, tho. I should probably use fresh dill since we have tons of it in our garden, but I dont.

Related: My mother was awesome at the unexpected lunchbox. I think I was the only kid who regularly got liverwurst with hot dog relish and cream cheese and olive sandwiches. I still LOVE cream cheese and olive sandwiches and I'm so surprised that's not a standard offering in diners.

razz, the tomato and cucumber salad with feta cheese is definitely a fave of mine, especially this time of year, of course. And with herbs added, like basil. The watermelon is a genius add that I'm definitely going to try. Onions and peppers also are icing on the cake salad.

I like a Seattle dog--hot dog with cream cheese and grilled and/or green onions.
Keema Matar for lunch (ground beef, Indian spices, onions, garlic, and peas).
