Beets

I think beets are fairly easy to make--but they are messy! I typically just like them boiled. When you roast them, do they still make a mess?

As stated, I put them in aluminum foil... so no mess. Then I just took a paper towel and fork and scraped off the skins. It was easy and not very messy. I will do this again.
