    double thick pork chops. Not because we're all that excited about carnivorous eating but because they've been in the freezer for months and I'm applying the same attitude to our food as I have about the rest of the housekeeping: why is this here if we're never going to use it? We've actually been pretty good about cutting meat consumption, adding a lot more beans and egg dishes to the menu.

    Yesterday was kale, sweet potatoes, and turkey kiehlbasa sauteed together.

    Today was roast turkey with dressing, carrots, and potatoes.

    Some of the dinners we've had this past week:
    chickpea/potato/spinach curry
    spinach lasagna
    black bean chili
    homemade pizza
    baked potatoes with toppings, sauteed red cabbage on the side

    Roasted a chicken atop winter veggies with herbs, made gravy. It was good! Tomorrow? Wow, like nearly instant chicken/veg soup!

    Flour Tortilla - microwaved with black beans, Mexican cheese. Topped with salsa and lots of shredded lettuce. Quick, simple and oh so good.

    I haven’t cooked since Friday because my DIL had leftovers in their refrigerator and went on a 3 week trip. I will cook Saturday when we have company and I will make stuffed pork chops.

    I make stuffed pork chops whenever my local grocery store has some decent thick chops on sale. Most of the time, I can only find the thinner ones or bone-in ones.

    I make homemade stuffing and put it on top of the pork chops and then bake it. It’s easier than stuffing it.

    I use Stove Top stuffing.
