    Next week's meals:
    Sunday- tacos
    Monday- homemade pizza
    Tuesday- bacon ranch chicken casserole
    Wednesday- spaghetti
    Thursday- parmesan pork chops

    I don't cook on Fridays or Saturdays

    I have successfully avoided cooking this week having 2 for 1 coupons at various restaurants. Sadly it’s coming to a end as tonight we are having company so meatloaf and mashed potatoes and tomorrow for company stuffed pork chops with baked potatoes. I bought cheesecake for dessert.

    I can seldom participate in the threads because I really don’t know what we’re having for dinner.


    But tonight I know – we’re having salmon. Probably a baked potato for DH. I have mashed cauliflower for me as I’m avoiding starches.

    Ribs Masala here -- pork ribs roasted and then treated to a creamy tomato sauce with vaguely-Indian-influenced flavors. It was a hit a few days ago, it was a hit tonight, and it will be a hit some future evening when we thaw another portion of it.

    I break out of the vegan world once a week for fish, so last night it was baked salmon, roasted cauliflower florets, and garlic brown rice. I had a packet of instant brown gravy to liven the rice and cauliflower up. There was enough left over cauliflower for a cauliflower soup today.
