    Leftover turkey

    So I got a 20 pound turkey for Christmas dinner and appetites seemed small this year. In other words, I have a lot of leftovers - lol. I've got the last of the carcass in a pot simmering away (already did one pot yesterday), so I will have a decent amount of pretty concentrated turkey broth for the freezer. Some will stay out for soup today or tomorrow. I plan to split up the leftover meat for... leftovers, lol, and then put some in the freezer for a couple batches of different meals later on.

    Anyone else have leftovers? Ideas?

    I cut up the turkey and bag it. That way I have a protein base for soups, stirfries, pizza topping, sandwiches, burritos, etc. 20lbs is a big bird!

    Shredded turkey, like pulled pork, with barbecue sauce of choice
    Turkey croquettes/meatballs
    Turkey and spinach curry
    Turkey salad (like chicken salad or give it the Waldorf treatment)

    Turkey enchiladas. I used to make a big pan of them and then freeze some.

    I do the same. Turkey soup, stirfries, tostadas, fahitas, rice/veggie bowl, bbq turkey sandwiches, rollups, jambalaya add-in, +++

    Thanks everyone. I always forget about burritos and tacos and such.

    Steve - do you have a recipe for turkey croquettes? I think I would like to try this.

    I haven't made any in quite a while (carb count) but this recipe reminds me most of the ones my mom used to make (and which I liked).
