    This morning I read about Shaksuka. It sounds good. I am always on board for tomato based anything and I like poached eggs.

    We've had shakshuka several times. My DH loves it; I'm ok with it.
    My therapist told me the way to achieve true inner peace is to finish what I start. So far today, I have finished two bags of M&Ms and a chocolate cake. I feel better already!

    Shakshuka doesn't appeal to me, though I like all the ingredients separately.

    That looks like poaching eggs in my homemade salsa. Have to try it as I have not considered such a dish.

    A friend told me that she loves creamy mashed potatoes, cooked with onions and garlic, spread on a pie plate, sprinkle with shredded spinach, place halved boiled eggs and sprinkle with parmesan cheese and reheat. It is really good and great for using up leftover mashed potatoes.
    We don't usually think of preparing eggs this way, do we?

    Double the veg, soy sauce and broth. YUM!!! I used a mix of ground pork/beef. 2 big bowls each!

    I like that concoction--I've seen the beef version called "Crack Slaw."

    I looked at this website and immediately yearned for the Indian restaurants that lined the streets in my town in NJ. Nothing like it here. How I miss chana masala, palak paneer, samosas, naan.. I could go on and on. I knowingly sacrificed Indian food for the VT lifestyle and that's fine but I sure do miss it. I'll have to learn to cook it somehow.
