    I've got frozen peas, pasta, couscous, pasta sauce, lots of parmesan cheese, and a ton of canned soup, mostly veggie.

    I've also got the canned black beans, tomatoes, and corn to make my quick black bean soup.

    Have a big bag of Granny Smith apples, too.

    I don't like cooking much lately, so this was easy and didn't mean food would go bad.

    Quiche tonight. Eggs, cheddar, ham, chopped leftover caramelized onion and roasted broccoli and milk, with bisquick mixed in. Super simple and absolutely delicious. The bisquick firms it up so it doesn’t need cream or pie crust. Great way to,use up leftover bits. I haven’t used bisquick in years but it was one of the things I got early on when I suspected the virus had no intention of respecting borders..

    tomorrow leftover day and tuesdaly chili with cornbread. One of those things you have to think about ahead of time as I use dried beans.

    Leftover frozen pizza for me. DiGorno rising crust pepperoni. These are more substantial. I'll get three meals out of it.

    Chicken breast I cooked in air fryer, can of black beans with canned sweet chili peppers added. Tortilla would have been nice, but alas, no tortillas at the store. Or flour, or sugar, or, or... really, nothing there. Huge whole aisles, totally empty.

    I just completed week 4 of my stock up for this pandemic. Got about another weeks worth of food, but I feel like I need to be on the hunt this week, or I may end up with nothing.

    We have been cooking labor intensive dinners...I guess to pass the time. Tonight was chicken pot pie made from scratch. We have always been just in time food shoppers so hoarding/stocking up doesn't come easy but now I am starting to be concerned about getting certain things in the future.

    Pinky, a few friends on FB have been spending a lot of time cooking labor intensive meals, as well, and posting pics of it! Yum!

    Last night I made a new dish - beans and collard greens "stew" (although not really stew-like). Serviced it over brown rice. I've never had collard greens before and this was really good!

    I have some soy beans cooking in the crock pot right now and will use them to make soy patties/burgers. Will wrap them in lettuce leaves and serve with... not sure what yet. LOL.

    Comfort food last night. Thawed a bag of my garden ratatouille and some cooked ground beef/It sausage mix. Cooked up a big handful of thin spaghetti. Grated some fresh pec/regiano over the top and voila! Full tummy. I would have kept on eating but luckily I just made 2 large servings

    Gardnr, that sounds really good.
    We are getting entirely too much pleasure out of eating these days. But we are enjoying it. Warm meals seem to improve our mood.
