    A home made version of pad thai with eggplant and peppers from the garden. I had a bounty harvest of a few varieties of eggplant and have roasted and frozen a bunch for later. Not my favorite vegetable, but it's mild flavored enough to add to a lot of things, I hope.

    Risotto! Pinktoe, good idea. risotto and…meatloaf. Yes, maybe thats what we will have. DH installed our red stove yesterday. Both require a stove.

    edited to add: oh pooh, I dont have risotto rice on hand, or cheese.

    Super simple tonight... grilled cheese sandwiches with either tomato or broccoli and cheese soup. Tomorrow will be lasagna roll ups with garlic bread.

    Last night we had chips and guacamole (had some avocados that needed to be dealt with), sliced cheeses and summer sausage and cookies. Nice being able to snack for supper now and again.
