Success is to be measured not so much by the position that one has reached in life as by the obstacles which he has overcome. - Booker T. Washington
Chicken sandwich and a pear and a clementine
As Cicero said, “Gratitude is not only the greatest of virtues, but the parent of all the others.”
Quinoa with salsa and guacamole; clementines.
Made the first mac and cheese in a long time and it was so good. Added green peas and a side of pickled beets.

Well this wasn't the plan, but birthday cake with Mom. It was an Italian rum cake from Market Basket, and it was surprisingly good!
We had best split pea soup ever. We had brought the peas in a bin full of food and the moving trailer showed up yesterday and so we cooked the peas with celery, onion, carrot, and cream.
It was amazing.
We had pulled pork! It cooked all day, then my husband pulled it- he's a fanatic about getting the fat out, so the pork is lean and lovely. Put NC mustard/vinegar on it and serve on those beautiful buns I had made. Feeling very "chef" like. Plus 3 quart freezer bags of the pulled pork for the freezer.
Tybee, I think I'll try the cream in the pea soup. I've made a couple batches this winter and both turned out well, but I imagine cream can only improve it!
Going to saute some turnip and acorn squash and then add diced tomatoes, serve over rice.
