    Fried okra is one of the four best foods on the planet, along with crab, fried shrimp, and hushpuppies.

    Just made a batch of Salvadoran style curtido (cabbage slaw) and some homemade red enchilada sauce to serve over black bean and sweet potato enchiladas.

    I love fried okra--and chicken gumbo soup is one of my favorites.

    My next brelinner will probably be Thai green curry with chicken and green beans. If I get around to it.

    The weather here has cooled down quite a bit the past couple days, so I have pulled out the crockpot and tonight is chicken stew/soup, with potatoes, carrots, celery and cabbage - so far. I may do some biscuits to go with it. I love soup weather!!!

    Sunday my son marinated chicken, steaks, pork chops and made baked potatoes and corn. Needless to say no one has to cook for awhile.

    I've been thinking of an alternative way to cook some tilapia. I want to try it in the crockpot. I'm thinking to put a layer of mixed veggies on the bottom, then layer the tilapia on top of that and then *just* cover with water add a bit of garlic, salt, pepper and a touch of lemon juice.

    Depending on the vegetables you use, you might not need that much water. Non-starchy vegetables, like peppers and onions, will give off moisture. Unless you plan to reduce the cooking liquid to a sauce/gravy, you may be diluting too much of the flavor with water "to cover".
