    What's for dinner?

    I struggle pretty much every day with what to make for dinner every night - LOL. If it were just me, it would be so easy!

    Anyway, finally decided on sweet & sour lentils over rice with cauliflower.

    I'm thinking maybe I should write out a weekly menu?? My mom used to do that and then post it on the fridge.

    Today I'm having two pork chops seasoned with kosher salt, fresh ground black pepper, and garlic powder and sautéed in olive oil.

    Home made Chocolate Ice Cream!!! And mushroom veggie burgers and cheese, with a side of frozen veggies of some sort - whatever I grab out of the freezer. Nothing fancy.

    Leftovers tonight: choice between steelhead trout filet or a pork roast with onions and sage. Fresh green beans on the side.

    I prefer to cook meals which create leftovers so I can coast for a few days each week.

    For tomorrow's dinner, DW is using one of the restaurant gift certificates she was given when she retired. Not sure which one yet. Another "coast" day!

    Grilling Ahi Tuna (aka yellowfin), marinated.
    (I will use Primo grill, with natural lump wood charcoal, and a grill mat. Give me 10 minutes @400F)
    Sides: steamed asparagus from the garden. scalloped corn.

    Dessert: Strawberry shortcake.
