    We had a store made roast chicken the other night. Used some of the leftovers yesterday for chicken quesadillas. Today I'll make the rest into chicken tacos. Should be enough for dinner tonight and lunch tomorrow. Enough meat on an $8 bird for seven meals between me and SO. Not bad.

    Got some shrimp on sale. Haven’t had it in a long time. Made a Lenten favorite - Spicy Moroccan Shrimp - from my Middle Eastern cookbook.

    Cleaning out the freezer so it is empty when we trek back home. Had leftover beef roast in tortilla shells with bbq sauce. It was surprisingly good. Bought a freezer to use here, and happily, have it empty and just a few things yet in the fridge freezer.

    I picked up a nice looking bunch of "organic" asparagus on sale (as if some asparagus isn't organic?). It used to be asparagus was a harbinger of springtime, although nowit seems like you can pick up some ratty looking stuff most of the off season. Last night it was steamed over pasta with a bit of red sauce. Cream of asparagus soup is sounding good for tonight, although it will be an experiment.

    I had to laugh, Tradd, because I always thought that eating things like shrimp and fish in Lent was so much better than eating meat that it kind of defeated the purpose!

    I’m Orthodox so it’s traditionally no meat/no dairy for all of Lent and Holy Week. I don’t give up dairy anymore, but do mostly give up meat. I’ve not had shrimp in a LONG time.

    None of this Catholic stuff about no meat on Fridays and the amount of whining I hear about it from Catholic friends and coworkers. I ask if they would like to trade. They stop whining when they hear how the Orthodox do Lent. It’s pretty funny.

    Tybee: I'm not religious as you probably know, but I come from a more-or-less Catholic background, and as a seafood lover, I am pretty amused by the idea that it's some sort of sacrifice to eat seafood on Fridays.
