Tonight was a big chef salad with grilled chicken thighs done Thursday night.

I'm working past dinnertime this week giving vaccines. So I just took 2 turkey meatloaves out of the oven. Add veggies each night and we're good for 4 nights! I have brussel sprouts, carrots and a serving of broccoli so fresh roasted veggies each night!

Friday my sister is coming to town so I only work a 5h shift in the morning. Fresh dinner on Friday night

I have the makings for stir fried rice tonight. Should be enough for leftovers as well.
