    Butternut squash baked with olive oil and quinoa with tomato sauce, both with nutritional yeast flakes sprinkled on top. I love them.

    The "something fancier" was a tri-tip steak I bought by chance at an Asian supermarket. Tough?? DW wouldn't even try it. I soldiered through a piece though I think it would have been less work overall to open a can of tuna or something. I will turn the rest of the steak into thinly-sliced beef for pho or somesuch. Maybe roast chicken tonight....

    This but I will use slivered almonds instead of coconut today to mix it up.

    Also quinoa with eggplant bruschetta.
