Yesterday my son grilled steak and I made baked potatoes and green beans. My DIL made a cake and we had ice cream. It was warm enough to eat outside.

Yesterday was leftovers. I'm planning on making a couple of meals for the week today so am not sure what will actually end up being for dinner tonight - lol.

I harvested the last of the white eggplant and will be making eggplant lasagna. The recipe will be an experiment.

Chicken with an herb sauce (basil) today. Maybe. We've had chicken quite a lot lately and if the meat was not already thawed, I'd make something else. I might just cook it and make it automatic leftovers and find some fish or beef to cook.

ETA I made eggplant lasagna again from the recipe I posted here (somewhere) because we were "gifted" eggplant from our kids' CSA box. I froze half of it immediately so we're not staring at it all week. We like it, but we've eaten it a lot lately.

Yesterday was spaghetti pie. Made several meals yesterday so have choices for dinner the next couple of nights. I think today will be a homemade rice-a-roni mix w/ground turkey and peas added - nice one pot meal.

Barbequed chicken a treat and it lasts for 3 dinners! And fresh corn from the fruit stand- we've never been able to get corn this late so they must have planted a late field.
