    Oatmeal patties with soy sauce. I am trying to finish off some of the carby foods in the house.

    Gyros using Beyond Meat. A lot of strong spice flavor over the textured protein. A new recipe for me and I've repeated several times. I make up a package worth of the Beyond Meat and divide into gyro sized patties to freeze. Tomatoes from the garden.

    Mixed lettuces, mozzarella cheese, crumbled oatmeal patties, onion, nopalitos, marinated artichokes, lemon juice, olive oil

    I recently got a bunch of Thai holy basil. mixed mini-peppers, and chicken meatballs, so I'm thinking of making something with those ingredients plus onions, garlic, ginger and Thai curry paste. Probably with rice or rice noodles.

    Tacos last night. We are getting more and more veggies in the house, so I think I'll break out the spiralizer and noodle up some squash and zucchini, with a fresh tomato and mozzarella salad.

    Summer squash sautee with veggies from my parents' garden. There is a cat in their neighborhood who keeps down the chipmunks.
