    When we went to Minneapolis for the weekend for our nephew's wedding, we were going to go out for dinner the next night with my brother and SIL. But, being that it was Jan 2 in Minneapolis, it was snowing and freezing. So last minute we decided to eat at their place. They grabbed a couple of filet mignon from their freezer and put together something similar to what you did (minus the garden-fresh veggies) and it was great and seemingly effortless on their part.

    I would have freaked out and suggested pizza--delivered of course.

    This is making me think it might be a good idea to have the ingredients for a quick, unexpected guest(s) meal handy. It used to just be pasta, but since we aren't eating that these days, I would like to come up with something else. But, as you say, there's always pizza!

    Ooh, that reminds me that I have local asparagus to use up. Maybe tomorrow's lunch or dinner will be a frittata. Tonight's was leftover Asian beef lettuce wraps.

    A salad of baby red and green lettuces, tomatoes, chives from my garden, roasted red peppers, Mexican three cheese blend and guacamole.

    Wild strawberries from my yard for dessert.
