    Baked chicken quarters, leftover squash and a small baked potato. I am stuffed!

    Tomorrow: burgers on foccacia bread and air-fryer french fries.

    I boiled a big pot of quinoa yesterday so I don't have to cook much during the week. I had some tonight with onions fried in soy sauce. So not onion rings but related.

    Chicken and wild rice casserole with cranberries, green onions and pecans. Green beans with almonds. Salad of some sort

    Another quinoa salad using up the last of my lettuce. I don't plan to buy more for awhile. It is too cold to eat cold foods like that - second day in a row temps where I have been did not get above freezing.
