Okra pickles.
A dish I improvised for the family impromptu Thanksgiving meal. It was simple and turned out far better than my expectations.

1. Bake a decent-sized butternut squash
2. Put the edible (and dare I say, yummy) squash bits into a large bowl
3. Throw in a decent amount of corn (who said this was a science?!)
4. Throw in a decent amount of Cannelli beans
5. Add a decent sprinkling of black pepper
6. Add a modest, depending on your mood, amount of olive oil
7. Mix everything like your life depends on it
I just gave this a random try for Thanksgiving and it turned out amazing. The texture of the beans and corn compliment the squash perfectly. Of course the inspiration for this came from "The Three Sisters."
I made another batch just last week and it tasted just as good. Two for two! Another butternut squash awaits on the counter. Can he make three for three? (queue dramatic music).
