    Very tasty and very easy!!!

    10 Minute Southwest Chicken Soup

    4 cups chicken broth
    1 1/2 c frozen corn or 14 ounce can, drained
    1 1/2 cooked black beans or 1-14 ounce can, drained and rinsed
    2-10 ounce cans of tomatoes and green chilis (I used 1 can of Rotel)
    1 cup of diced, cooked chicken
    1 t garlic powder
    1/2 t cumin
    1/2 t salt
    1/4 t black pepper
    1/8 t cayenne
    Optional: top with Mexican cheese blend in bowl

    Used all organic, except Rotel.

    Buying a roast chicken, making tacos (maybe with the roast chicken or other chicken or beef), making pita sandwiches (maybe with the roast chicken, maybe lamb). Ok these seem like cheats as they are easy enough and I buy the tacos and pitas and maybe a chicken etc.. Really I cook, pretty much, but these are the easy. If I'm just feeding me I'll just add some alums and cheese and salt maybe spice to canned black or pinto beans - easy as you can get, or bake a piece of frozen salmon, or well there are times I've had rice and jarred tuna for dinner.

    My favorite recipe that hubby bakes is can of creamed soup, little container of plain yoghurt, 1/2 bag of shredded potatoes (thaw them or they take too long to cook) or more, and 8 ounce bag of sharp shredded cheese. Salt and pepper to taste. We used to make it with a full bag of potatoes and more cheese but it was a lot for two people. Can be personalized and makes a good potluck recipe.

    The chef uses 3 parts potatoes, 2 parts cheese, 1 part soup and 1 part sour cream or yoghurt for a crowd recipe.

    I had made a Rice-A-Roni Spanish rice (packaged food is already cheating) for burritos the other night. I had a lot of rice left over, so the next day added canned black beans and that was lunch. I thought that was a very efficient way to cheat on two meals!
