    Happy Chicory Week!

    I, for one, have no thoughts because I've never prepared or eaten chicory, but I'm interested in learning more.

    I think I've seen chicory leaves in Spring mix, unknowingly.

    They are using chicory very broadly. I think most "dandelion" sold at supermarkets actually is chicory (no wonder it doesn't look that much like the dandelions growing on lawns - although they are also edible) and I've used the dandelions from the store (in a casserole with eggs, onions, potatoes, and a bit of cheese). Radicchio I've sometimes used as an addition in salads.
    If you want something to get done, ask a busy person. If you want them to have a nervous breakdown that is.

    My husband used to drink chicory coffee. No idea how it was made, but he substituted it for the real thing.
    Speaking of you gotta love Vermont, I was there last week in Bennington and there was public access tv interviewing Ben and Jerry about politics. It must feel good to live in such a democratic state, with the feeling that you can make a difference locally.

    Bennington is cool. We've visited it a few times when in the Berkshires.

    When I look at your picture Catherine, I think radicchio. I guess that is a kind of chicory, but I usually think of chicory as the kind that Rosa thinks of.

    I like it--I try to stop there when driving between Midwest and New England. Unfortunately, Bennington Pottery store is closed now due to pandemic but you can still purchase online.

    I am in awe of everyone's plant knowledge. I can recognize a dandelion! LOL I do recognize those flowers, rosa, but never knew the name. That is my "what I learned today".
