    What a great topic! I LOVE grilled cheese. It's my favorite sandwich, and it brings me happy memories of my mother and I going to a local diner and having grilled cheese sandwiches and ice cream sodas and just chatting.

    Typically I prefer Swiss grilled cheese on rye bread over American cheese on white. I like tomato as an add-on.

    As far as diner food goes, it's also pretty cheap if you need to go out to eat and don't want to spend much. Then you have enough money left over for a black-and-white ice cream soda.

    A sharp cheese with a nice whole grain bread, add chutney.

    I also grill cheese between raisin bread slices, I know, probably sounds gross, but I like it.

    All buttered.
    My therapist told me the way to achieve true inner peace is to finish what I start. So far today, I have finished two bags of M&Ms and a chocolate cake. I feel better already!

    OMG - we were separated at birth, maybe? I was getting ready to post my favorite grilled cheese - swiss cheese on rye! Not so much the tomato, but I recently learned that is my mother's favorite add-on. LOL.

    I have forgotten how great a thinly sliced piece of tomato is on a good grilled cheese sandwich.

    This thread reminded me of the Cheese Frenchies served at King's Food Host in the 1960s. There were a couple in my town. I think there still may be one in Nebraska. At any rate, it's hardcore grilled cheese - dipped in egg and flour and cornflakes and DEEP FRIED. I think they also served a tuna Frenchy.

    I do it on white bread mostly. I however add a little pickle. My son just loves it this way.

    Sharp white cheddar on multi-grain sprouted bread is my go-to. With butter on one side.

    Okay---Here's the recipe from a cafe waaaay up dere in the middle o' nowhere, that closed 25 years ago. Anyway, just use regular sandwich bread & regular cheese slices, BUT put the dill pickle slices IN the sandwich with the cheese, then grill it. Then, cut er up and dip the pieces in ketchup(no particular kind)as you eat. Yup. See? I can't tell you how indescribably awesome & amazing & yummy that is! But yeah---try it, you'll like it.
