    Carrot top/scape pesto

    Had some carrots from the garden last night for dinner and had seen a recipe for carrot top pesto, so I decided to try it.

    I had also seen garlic scape pesto and have a bag languishing in the fridge. So, I combined the two with the “is anybody going to eat these?” Salted nut crumbles from the bottom of the jar, left garlic and salt out of the recipe, and with 1/2c Evoo and some pepper have a really nice result.

    fewer scapes and more carrot top next time though - Dh says the whole county is now vampire free.

    I just saw a garlic scape pesto recipe online yesterday while I was looking for a variation on a minestrone recipe! I happen to have scapes! I'll have to try it--it looks good!

    Scapes are the seed bearing part of the plant. You cut them off so that more energy goes into the bulb.

    That. It’s a long, often twisty or curved green stem with a skinny, pointy bulb on top that would open into a round flower if you didn’t cut it. You use the stem part.

    Pasta is the obvious one. I also use it instead of tomato paste on a flatbread/pizza. I also use it like mayo as a sandwich spread.

    Well, today I mashed a hard boiled egg, stirred it into the pesto with a tsp of apple cider vinegar, diced up a cucumber, and ate the results spooned into Romain lettuce leaves - yum! I bought the vinegar. (Also the nuts, pepper, and evoo for the pesto)

    ed to add - you can dip things in it.

    I like to mix various kinds of pesto with orzo and goat cheese and bake. Shrimp or chicken can be added.
