A salad is always well received. Go with what is in season and add some fruit, fresh or dried for a different taste.

Roasted root veggies... Carrots, beets, parsnips, yams... Include onions n garlic. Slice, toss w/ salt, curry powder, and lotsa olive oil. Spread on a baking sheet and roast at 425-450 for 10-12 minutes per side. Turn for another 10-12 mins.
So darn good!
If you want something festive looking: a black bean salad with red and green ingredients (peppers, tomatoes...). I make a simple vinaigrette with lime juice instead of vinegar, and cumin mixed in.
