    Frittata fillings

    So entropy has overtaken me and I'm giving up trying to plan dinner on Sunday nights. For the near future, Sunday nights are frittata nights.

    Because I am not completely slothful, I like to change up the fillings. What do you add to yours?

    So far I've used (all with onion):
    Red peppers, potato and feta
    Spinach, mushroom, bacon
    Potato and bacon
    Formerly known as Blithe Morning II

    Frittatas are one of our "we're too lazy to cook tonight" dishes.

    garlic, shallots, prawns
    garlic, shallots, crab
    garlic, shallots, smoked salmon
    garlic, corn, red/yellow/green peppers, squash
    garlic, clams, potato
    fresh herbs, good cheese

    Sometimes instead of making a giant frittata, we'll use small serving-size ramekins, and sprinkle a little cheese on at the very end and run under the broiler, then serve with a small salad.

    Goat cheese, mushrooms & spinach.
    Basil, tomato, garlic, mozzarella.
    Zucchini, red peppers & basil.
    Pancetta, parsley, mascarpone, Parmesan.
    Bacon, cheddar, jalapenos & shredded bbq beef.
    Basil, oregano, garlic, Italian sausage, leftover spaghetti (really this is baked spaghetti, but who's counting?).
    Smoked pork then top it off with coleslaw.

    My favorite is caramelized onions, bacon, and asiago cheese.

    But I'll eat almost any kind of frittata.

    I made a spinach, bacon and feta one last week -- shouldn't have added extra salt as the feta and bacon were very salty, but otherwise it was great.

    Frittata night sounds like a great idea. We have Friday night soup night and maybe I'll make a frittata night as well.

    One of my favorites is potatoes (thinly sliced), onions and rosemary with a little Parmesan or asiago on top.

    Oh gosh....I'm hungry. All these combinations sound good. I usually just use fresh mushroom, onion, spinach, red pepper, onion, and cheese. My DH doesn't eat pork but I may have to start making two so the boys and I can enjoy the bacon or ham.
