I roast a standing rib roast every christmas. My notes are pretty bad, unfortunately and I forget exactly what I did.
I really like Paula Dean's method of heating it for a little while, then turning the oven off for several hours, then turning it on for a short while. But that means we can't use the oven for anything else, which is a problem, since DD has a VEGAN roast to cook, plus there's other things.
I know there's a high-heat method which would take less time. Anyone out there use this method and is happy with the results? Thanks.
