    I'd increase meat, fish, fowl, and decrease starchy foods. Check out paleo cookbooks.

    Thanks for the check-in, Rosemary. I'd say it has, but I am still eating more substitutes than I would like. I am going to try out another lettuce salad this week while on spring break and see how it goes. I appreciate all your support; likely I'll be back again at some time.

    2 months sure goes by quickly!!!

    I got diagnosed with celiac disease years ago, so I have a great big store of delic GF meal ideas. A few favorites include masala, fingerling potatoes with chives, beef stew, risotto, and greek salad.

    And I know you said you're not up to replacements yet, but when you are, here's the first (and best) cookie recipe I used.

    Gluten Free Chocolate Chip Cookies

    1 cup butter
    ¾ cup sugar
    ¾ cup brown sugar
    1 tsp GF vanilla
    2 eggs
    2 ¼ cup white rice flour
    1 tsp baking soda
    1 tsp salt
    2 tsp xanthan gum
    12 oz GF chocolate chips

    Cream butter and sugars. Add vanilla and eggs and mix together. Combine flour, baking soda, salt, and xanthan gum and add to creamed mixture. Add chocolate chips. Bake at 375 degrees on ungreased cookie sheet for 15 minutes or until done.

    Must. Not. Read. this place when I'm bored and hungry at work with time on my hands. $80 order to Tasty Bite later... Actually, I've been planning on ordering some healthier foods by mail since down here (Honduras) I don't seem to be able to easliy eat healthy. At least all of these dishes are things I like (I've really, really missed my Indian food fix), and are healthy and will keep without refridgeration. However, moderation is not my strong suit...
