Meatloaf ... :-D

My mom lays a few bacon strips over the meatloaf for a bit of flavor.

I don't eat beef or pork so my meatloaf is made with ground chicken.

It's always been one of my favorite winter meals, with a baked potato. And as a leftover the next day with gravy instead of ketchup.

Mmmm... ground chicken loaf sounds delicious! Like typical beef-meatloaf, I can't help but think of all the variations one could incorporate into chicken-loaf recipes. Definite food for thought...
