I usually would broil salmon......turning it once curing the cooking.
Then I tried it wrapped in parchment paper, and that was really good.
Then I tried just baking it at 400 F on top of a parchment paper-lined pan, and it's soooooooo good.
I can't believe how moist and tender it is when baked, rather than broiled.

my usual method. And sometimes I coat it with spices and fry in olive oil and then bake it this way. And occasionally I cook it in soups (but even then I often bake it this way first - just enough to get the meat to easily peel away from the skin).

I add raw chunks of it to my corn chowder, and I can't believe now quickly it cooks.......maybe less than 1 minute.
The other night I covered the salmon lightly with dijon mustard before baking and it was really good.
I need to try other types of fish. I always just get Salmon.

Dijon mustard... mmmm...

I just said to DH last night, "Where's the dijon mustard?? I can't cook without dijon mustard!" And that's true. I was making turkey burgers that called for it and I had to use Gulden's Spicy instead. Oh well.

I bake mine. Coat the bottom of a glass cooking dish with some olive oil. Dip the top side of the fillet in the oil, then place in the dish skin side down Season with salt and pepper or lemon pepper (my favorite) -- sometimes I'll do the herbed butter thing like they do with the salmon they sell at costco. Bake at around 400 for 10-15 minutes. Super easy and tasty. I have it on the menu today, actually.

In a glass cooking pan or just wrapped in foil:

I cover my salmon with a jam/jelly of choice, such as apricot or raspberry(seedless!) jam,
Add a spicy mix of creole seasoning,
Add pieces of chopped red pepper and/or asparagus.

Bake in an oven,
Yummy over rice :)

We usually have salmon when we want a quick meal. I simple sauté it in a small amount of butter for a couple of minutes.

Grilled over an alder fire is the best! It's a Fourth of July favorite here.
On an ordinary day, we grill it in foil with lemon slices.
I could eat salmon every day, I think.
