View Full Version : Potluck for vegan and kosher?
I have a pot luck coming up at work. At first I thought perhaps I might make a spanokopita, for the vegetarians. But I have some folks who are vegan and like raw, and of course are gluten free, and my boss is Kosher. Now, of course, the obvious, a salad, fresh fruit or salad. But yawn. I don't like fresh fruit myself too much. I was thinking perhaps guacamole. At any rate, I would appreciate creative ideas that everyone likes. ;)
I usually make vegetable salad with plenty of sprouts and raw vegan version of 'brownies' when I know I'll be hosting someone on raw vegan diet. There are no ingredients that could violate the kashrus however a lot of my kashrus observant acquaintances would not eat something prepared and served in a non-kosher household. I usually use this recipe http://www.thisrawsomeveganlife.com/2012/05/raw-brownies-strawberries.html#.U0d3kLRUDAo , replacing hemp seeds with soaked almonds and using medjool dates. It's always a great success.

My employer says he is kosher, and observant. That they keep a kosher home, and that he, himself is a vegetarian, but I see him get sandwiches, (presumably vegetarian) sandwiches at a nearby deli, and also partake, a small bit at other potlucks. So, it's probably ok to find a safe zone. Not everyone in the group is veggie or raw or kosher. That's why I'd like to have something kind of likeable by a broad group. Maybe bean tostadas.....
I like to make vegan salads for potlucks. They are delicious and very satisfying, and there is no need to worry about keeping hot. Some of my favorites:
- wild rice, celery, apple, carrot, bell pepper, sunflower seeds or chopped pecans. Orange juice-olive oil salad dressing.
- curried rice salad with nuts (almonds or peanuts), fruit (apple or grapes; I like to use apple + raisins), bell pepper, carrot, something green (shredded spinach for instance), peas. lemon juice + olive oil, curry powder.
- black bean salad - salsa flavors (tomato, onion, cilantro, lime juice, cumin, oregano)
- sweet potato salad. wash but don't peel sweet potatoes. slice into pieces about 1/4 inch thick x 1/2 inch and roast. To make the salad, add shredded spinach, peas, raisins or chopped prunes, red bell pepper. Orange juice-based dressing is good.
One of my favorite hot vegan entrees to take to a potluck is this sweet potato/white bean dish (http://www.foodnetwork.com/recipes/sweet-potato-white-bean-and-pepper-tian-recipe.html).
I double the beans and cut the olive oil to about 2 Tbsp, but for a special event I have to say it is quite delicious with 1/4c.

I think the guacamole is a great idea. It's good with chips, raw veggies, etc...
Thanks for these ideas! DH and I are gluten-free, and we are often invited to kosher potlucks--Shabbat dinners, etc. Very helpful indeed!
Some good ones. The wild rice casserole sounds great. I also have a birthday this weekend...not sure how much I'll do. But it sounds really inspiring!
