What I usually make with various beans:
hummus
Cuban black beans and rice
bean soups (various)
baked beans
Puerto Rican style rice and beans
bean enchiladas/burritos Mexican style
Central American style bean tacos
bean salads (various recipes)
Indian style curried beans and rice
Tofu (don't currently make my own) in various Chinese recipes
bean sprouts (do my own) in various recipes

I like beans and make these dishes:
1) Black beans: mixed with vinegar/oil dressing (OR balamic vinegar), chopped jalapeno peppers, and sometimes onions.
2) Chan Masala - Indian dish made with Chickpeas in a sauce of cooked tomatoes, onions, and yellow curry
3) black bean salad mixing in: frozen corn, chopped up avacado, yogurt with curry spices
Since you are vegetarian, you should also try dishes with peanuts. Thai recipes using peanut sauces would be good ones.

Sweet and Sour Chickpeas over rice: make a recipe for sweet and sour sauce, but add cooked chickpeas instead of meat.
Spaghetti with lentils: standard spaghetti sauce, but use cooked lentils in place of meat. I have made it with bartolli beans (in America these are called cranberry beans) too. Very good.
Cannelli beans with vinaigrette, garlic, onions and baby kale.
Cannelli beans (or navy beans) sauteed with onions, kale and lots of black pepper and garlic.
In the days before I discovered that legumes are a major catalyst for migraine, I used to make lentil rissoles and bean loaf.
I eat lentils cooked with quinoa most days for a protein. It helps to soak the beans (any beans) overnight because it helps get rid of something that makes them hard to digest. Using beans with quinoa also replaces bread for me, thereby cutting down on plastic in the house by eliminating bread bags.
I make black soybean cake every once in awhile, with cream cheese frosting. I modify the bean brownie recipe that's all over the Internet. It's a flour-free recipe, and it's surprisingly good.

Yes, I love and make chana masala, and also make black salad. I make it with chopped tomatoes, colored bell peppers, onions, garlic, lime, avocado and fresh cilantro.

Another think I make is a tabouli salad with couscous, chick peas, fresh mint, garlic, lots of parsley, chopped cucumber and tomato, fresh lemons squeased, a little honey, salt and pepper, olive oil.
I rarely eat beans--maybe once or twice a year--but I used to eat something like these often at a Pakistani restaurant:

We have a favorite black bean salad - black beans, sweet potato chunks, red onion, sweet corn, red bell pepper and chopped cilantro in a lime vinaigrette. Also eat a lot of smashed pintos and cheese tacos wth corn tortillas.

A layered bean dip, using mashed beans of any variety (I mix with taco seasoning) and topped with whatever: shredded cheeses, peppers, onions, lettuces, olives, sour cream, avocado/guacamole, etc.....And using whatever you feel good about as a vehicle to dip into it.
My standby beans are pintos. Ranchero, refried, or campaneros style beans. But, this week I made a pot of lentil, vegetable soup to take this week for lunches at work.

There is a great cookbook called "Bean Banquets" that has many ethnic bean recipes...a great book for bean lovers.....

Once I took a bean cooking class, it was one night and we made a variety of bean dishes.
