I'm teaching a class after the first of the year at the Food Bank using recipes made in muffin tins. I've converted some recipes, like Pepperoni Cheese Bake - a Bisquick recipe normally baked in a 9x9-inch pan, and old standards like meatloaf and some other casserole-type recipes. These recipes are great for people who need to watch portions, or like me, lunch box ideas for hubby that I can keep in the freezer. These are also recipes I can bake in my toaster oven, convection/microwave oven or Solar Oven in small batches. I just made a recipe for Baked Oatmeal I found on-line (great breakfast option if your family doesn't like to eat oatmeal as a cereal - this is a nice hearty muffin - great if you need a portable breakfast). There are things like baked spaghetti, Taco Cups, and I've got recipes to cover those. I'm working on some using leftover turkey and ham - from holiday foods.

If anyone has a favorite recipe baked in muffin tins (or silicon muffin cups) and would like to share, I'd really appreciate it. :thankyou:

I like this idea! If I could make six servings of something, we could eat two for dinner, I could take one for lunch the next day and have 3 to freeze for the future. So simple and would make life easier.

I can't wait to see what ideas people offer.

Meat loaf muffins - what a great idea!

I've recently discovered I'm allergic to grains and starches so new casserole/loaf recipes high in protein are very welcome.

I'll try substituting quinoa (it's a seed, not grain) and see what happens.


This is inspiring all sorts of other ideas:
*Little baked chicken muffins with paprika and parmesan
*Pastrami, sourkraut, swiss, and mustard with egg to bind ingredients
*Salmon cakes with lemon, red bell pepper, eggs, touch of quinoa for body
*Cod or halibut cakes with egg, lemon, and dill

You might take a look at the cooking blog called "Emily Bites." It has some unique recipes for baking in muffin cups.

Thanks for that blog. LOTS of nice recipes there, along with a whole section of "main course muffins". I've also found a couple books at the library that have helped me fill out the variety of recipes I wanted. Bisquick has a bunch of recipes too, and I can also include a recipe to make their own baking mix at home.

This post made me go to pinterest and type in muffin tin recipes. Wow, there are a lot of things you can do with a muffin tin (either side). I think the cool little bread bowls and bacon bowls by using the muffin tin upside down were really neat.

I did Pinterest too, and the "Muffin Tin Cookbook" was also one I found at our library. I discovered I had a file of recipes I made years ago on the subject. The "Meals-in-a-Mug" book was a great idea! It would work for the food bank and the Senior Center (lots of cooking for one or two recipes are appreciated by them whether it's a whole class or not). I'll have to try to find the "Meals-in-a-Mug" book at the library, or through inter-library loan. If not, it may be worth purchasing. Many, many thanks!:)

The Meals in a Mug book is really good. I was outside reading it this summer and a neighbor said she was going to get it for her daughter in college. I made a few copies of recipes I would like myself.

I found a used copy of 250 Best Meals in a Mug today and I have at least 40 recipes marked. They even include gluten-free variations, which is WONDERFUL!!! Well worth the $5 it cost, and I thank you so much for suggesting this book. :thankyou:
