Someone gifted me with 10 oz of honey in the comb (with a $28.00 price tag!). Any suggestions on the best way to use this? We don't use sweetener in our teas.

Wow -- that's an awesome gift! Well, I'm a beekeeper, so I might be a bit biased. :~) My favorite way to eat honey in the comb is mixed with ricotta cheese and spread on crackers or little slices of a nice crusty bread. Enjoy!

Yum. You can substitute honey for sugar in more or less any recipe unless you're looking for crunchy sugar. Up to one cup, honey can be substituted for sugar in equal amounts. Over one cup, use about 3/4 cup of honey for every cup of sugar. Of course you're not going to notice that yummy taste if you bake with it, but you'll still get the health benefits.

I sweeten my coffee with a little honey, it's a noticeable taste but I've come to prefer it to plain sugar.

We used to have it fairly often as kids. I remember that it was something special above straight honey on toast. The mixture with ricotta cheese sounds wonderful.

Cdttmm: We tried the honeycomb yesterday on toast with ricotta, and sprinkled a little bit of cinnamon on some pieces and apple pie spice mix (a freebie from Penzey's) on others. It was delicious, and the apple pie spice mix was our favorite.
So thanks for the suggestion!

Ooooh, I never would have thought to add a few spices -- great idea! Sounds delicious and I'm glad you liked the honeycomb/ricotta combo. Now I've got a hankering for some!!!
