I collect a lot of recipes and cookbooks and there are a couple categories that are just plain fun. The first category I call "oddball" recipes, and the second category I find interesting are "mock" recipes, because I'm sure they were mainly made out of desperation (necessity being the mother of invention). Here are some that are pretty interesting. Please share your "oddball" or "mock" recipes.
"oddball" recipes
SODA POP CAKE

1 box cake mix, any flavor
1 (12-oz.) can soda pop, any flavor
Mix ingredients and microwave for 8 minutes in a 9x13 dish, covered and vented. Let stand for 10-minutes and turn onto a serving plate. You can also bake cake in oven using bake time on cake mix box. Note: Using an electric mixer yields better results than mixing by hand. If you don't have a 9x13 dish with a vented cover, use plastic wrap, pulled taut, and poke a small hole in the middle.

ICE CREAM BREAD

2 c. of softened ice cream, any flavor
1-1/2 c. of self-rising flour
Preheat your oven to 350°F. Grease an 8.5"x4.5" pan (anything from 8x4-9x5 will work). In a mixing bowl, mix together the softened ice cream and the self-rising flour, until combined. Do not over mix, just until combined. Using a spatula, pour into the prepared loaf pan and smooth out the top with the spatula. Bake for 40-45 minutes or until a toothpick inserted in the center comes out relatively clean with just a few crumbs. Remove from oven and allow to sit for about 5 minutes. Remove from the pan and allow to cool the rest of the way on a cooling rack. Enjoy warm or at room temperature. Only keeps for 2-3 days.

MOCK MIRACLE WHIP

3 T. arrowroot powder
1 c. water
4 T. honey
1/4 c. + 2 T. Apple Cider Vinegar
1 T. seasalt
1/3 c. lemon juice
Blend.

MOCK CREAM

2 oz. margarine
2 oz. sugar
1 T. dry milk powder
1 T. milk
Cream sugar and margarine until light and fluffy. Add milk powder and milk and beat well until light and fluffy again. Chill and serve.
I remember baking these as a kid and they were very good.

My mother made this cake but wouldn't tell my dad it had mayonnaise in it because he didn't like mayo. Mom was passive aggressive, too!

I've never actually tried it, but wondered if it would work with gluten-free flours and should really try it G-F sometime.
Well, whats in ice cream? Milk, sugar, eggs! All you need is the self rising flour. Why didn't i think of this?
I did know that melted vanilla ice cream makes a wonderful sauce for bread pudding. For a change, add a little nutmeg.
I'm particularly fond of fauxtato salad and faux rice, substituting cauliflower.

Speaking of "mock" recipes, does anyone have one for "mock" Devonshire cream? Would love to try this with my morning tea and scone.

I've made one of these before! I tried it at a friend's house and then asked for the recipe. Was slightly horrified at first, but I quickly got over it because it makes such a delicious cake. Zucchinni chocolate cake also pops to mind also as rather unusual.

Mayo is just oil and eggs and a bit of lemon juice. Many cake recipes I see call for oil and eggs. There ya go.... :)
For a couple of years we were part of a dinner circle with fellow church attendees. For our turn I made an entire menu of oddball items, like blueberry soup (served cold), Magic Meatballs (grape jelly), and a carrot-spice cake. There was a vegetable, too, but I don't remember what it was. I'm guessing half the guests stopped for a snack on the way home. I care more about my guests' preferences now than I did then; valuable lesson for me. But it was fun to give the odd stuff a try.

Hello!, I'm not really into baking but I just want to share a new recipe that I discovered recently. My daughter tagged to me an easy "Cake Mug" recipe. I tried it and it was indeed successful. Its actually a mixture of my fave hotcake mix, an egg, butter and just made some twist on its mixture then add cheese and bacon. You may want to try that. Its good and real easy!
I have seen several cookbooks devoted to Mug cakes and other recipies to cook in a mug. I passed them by since they just seemed too tempting.
I've found a number of gluten-free "mug" recipes on-line that have proved invaluable. It's nice to be able to nuke one mug cake when you need a little something for dessert without having to make a large cake. It's also nice to be able to keep the heat out of the kitchen in the summer. The recipes I use are also high-protein, gluten-free, and low-glycemic, so I can skip the sugary options.
Check out these books. The first one was suggested by a forum member (sorry, I don't remember who). I've worked on teaching a class at the Senior Center using "Mug Recipes". These recipes are great for college students living in a dorm, singles, and the elderly.

I was going through the recipes at the Save-a-lot website hoping for some frugal ideas and found these 2 recipes and remembered this thread.
2 Ingredient Apple Cake
1 Box Angel Food Cake Mix
1 can apple pie filling
Pour dry cake mix into a medium-sized mixing bowl. Pour the entire can of fruit filling into the bowl as well. Mix together until blended thoroughly. Pour into an ungreased 9x13" baking dish/pan. Bake at 350°F for about 25-30-minutes until set in center and lightly browned. Remove from oven and let cool. Top with your favorite topping or berries and serve!

Lemon Cake Mix Cookies
1 (18-oz.) Ginger Evans Lemon Cake Mix
1/2 c. Westcott Vegetable Oil
2 Coburn Farms Grade A Large Eggs
Preheat oven to 350°F. In a medium-size mixing bowl, mix all ingredients together. Be sure to stir thoroughly to remove lumps. Scoop out mixture with a spoon and place a dollop on an ungreased baking sheet about 2-inches apart. Bake for 8-10 minutes. Remove from heat and let cool.

That mock cream reminds me of rationing days recipes that I've seen.
One "mock" recipe I grew up with and never tried was that recipe they had forever on boxes of Ritz crackers for mock apple pie. Anyone ever make it?

Never did. But I heard it tasted just like it. I think of that as food when there isn't fresh stuff available food. I also remember in the Little House books by Laura Ingalls Wilder, she mentions her mom making pie from green pumpkin and spicing it like an apple pie and saying it tasted just like apple pie.

I also had once made the mayo chocolate cake and it was good. I still have my go to chocolate cake recipe that I believe has no eggs in it. It comes out so moist!
I have a mock recipe cookbook and have used it for some things. One that I use all of the time, when I make it, is the KFC coleslaw recipe. I will be using vegan mayo now.
If anyone would like the chocolate cake recipe I'd be happy to post it...
