I found recipe on a vegetarian site and gave it a try, excellent.
Wash and cut sweet potato into 6 or so wedges
coat in olive oil and spices Mexican flavored you prefer
bake 425 flipping till done
remove sprinkle cheese, beans, peppers and reheat
enjoy with all nacho fixing you usually do
this was my dinner and yummy

I make sweet potato "chips" in the microwave and I could use them to make nachos instead of corn chips. Thanks for the idea!!!
Toppings for nachos?
I know the basic, cheese lol but would pineapple taste good with nachos with cheese?
My son puts pineapple on everything it seems, so why not.

I have a TopChips Kit - http://topchips.com/ I found mine at a thrift store and love it. Tip: After you make your "chips" place them on a baking sheet in a single layer in an oven with the oven light on ONLY to make sure they are completely cooked through and remain crisp. This is especially important if you live where there is a lot of humidity. I usually make them in the late afternoon if I serve them for supper, or make them in the morning and serve them for lunch. After that, I just keep them in an air tight container (usually a canning jar) with a lid on it. Tip #2: Try to nuke potato slices that are the same size. In other words, cut both of the smaller ends and nuke those small chips. If you have a mix of sizes, the small ones will get over-cooked and the large ones will be under-cooked.
